You can defeat him with the Avengers' help and using the super fast Quinjet, a high tech fighter jet with firing missiles, a detachable mini jet and a prison pod. Use the prison pod to imprison Loki after you have captured him. It won't be easy as Loki has his own vehicle, the Chariot, which he is fleeing fast in to avoid getting caught.
